Method

  1. Line a sheet pan with a silicone baking mat.
  2. Mix the green tea powder, sugar, and egg whites with a paddle attachment on low speed until clusters form. Spread in a very thin, even layer on the prepared pan.
  3. Dry in a 220°F/104°C convection oven for 4 hours. Reserve in an airtight container until needed.
