Method

  1. Bloom the gelatin in the water. Squeeze out excess water and set aside.
  2. Whisk together the juice, sugar, and eggs. Add the butter and place the mixture in a bowl over barely simmering water.
  3. Cook the mixture, stirring it every 3 to 5 minutes, until it is thickened and approximately 165°F/74°C. Remove the pot from the heat and blend in the gelatin. Str
