Method

  1. Place the chocolate in a stainless-steel bowl.
  2. Bring the cream to a simmer. Pour the hot cream over the chocolate. Allow to stand for 1 minute, then gently stir to blend. Strain and cool.
  3. Cover with plastic wrap and refrigerate overnight before using.
  4. Whip the ganache to desired peaks for use.
