Method

  1. Caramelize the sugar and glucose using the dry method to a medium amber color.
  2. Add the cream and stir over the heat to dissolve all the lumps.
  3. Pour the caramel over the chocolate and allow to stand for 1 minute. Stir gently to combine. Stir in the nuts and salt.
  4. Spread in an even layer in a sheet pan lined with a silicone baking matand chill
