Method

  1. Combine half of the blueberries in a medium nonreactive saucepot and add just enough water to cover them. Cook over medium heat until berries are soft, about 10 minutes.
  2. Purée in a blender until smooth. Add sugar to taste and then add the lemon zest. Strain through a fine-mesh sieve and cool completely, about 30 minutes.
  3. Adjust the consistency if need
