Method

  1. Prepare a large pot of boiling water. Prepare an ice bath.
  2. Blanch the mint for 20 seconds and shock in the ice water.
  3. Drain the mint, place in a blender, and blend until smooth.
  4. Add simply syrup gradually to make a smooth purée.
  5. Thicken as needed with the Ultratex 3.
