Method

  1. Combine the orange juice, vanilla bean seeds and pod, cinnamon sticks, and sugar in a saucepot and bring to a boil until the liquid reduces by half, about 10 minutes. Whisk the liquid constantly during the reduction process.
  2. Remove from the heat and strain into a clean pot. Thicken the sauce by vigorously whisking in the butter. Add the orange suprêmes.
