Mirror Glaze

Method

  1. Place the mirror glace in a small bowl and stir until there are no lumps present.
  2. Gradually stir the blackberry purée into the mirror glace, add a small amount at a time. This will prevent lumps from occurring. Make sure the mixture is homogeneous and smooth before adding more of the purée to the mirror glaze.
  3. Refrigerate until ready to use.
