Maple syrup 1


  1. Bring the maple syrup, vanilla bean, salt, and orange to a boil. Add the agar-agar and allow to boil for 2 minutes. Remove the vanilla bean.
  2. Chill the mixture over an ice bath.
  3. Once set, purée in to desired consistency, adding maple syrup as needed to thin out mixture if necessary. Adjust flavor with salt.
