Method

  1. Combine the pineapple juice, wine, honey, ginger, and allspice in a saucepan, bring to a boil, and boil until reduced to the consistency of a heavy syrup. Strain through a fine-mesh sieve into a clean saucepan.
  2. Place over low heat and whisk in the butter gradually to maintain the emulsion.
  3. Keep warm in a bain-marie until ready to serve.
