Method

  1. Combine the sugar, pectin, and guava purée in a saucepan and bring to a boil.
  2. Bloom the gelatin in cold water. Drain and set aside.
  3. Remove the pan from the heat, add the gelatin, and stir to combine.
  4. Pour immediately into the frame and freeze.
