  1. Combine the milk, cream, 3½ oz/100 g of the sugar, the glucose syrup, and salt in a saucepan. Split the vanilla bean, scrape the seeds into the pan, add the pod, and bring the mixture just to a boil over medium heat. Immediately remove from the heat, cover the pan, and let steep for 5 minutes.
