Method

  1. Bring the milk and corn syrup to a boil.
  2. Combine the sugar, milk powder, sorbet stabilizer, glucose, and salt.
  3. Allow the milk mixture to cool to 180°F/82°C and pour over the dry ingredients. Whisk well and pour into a pan placed over medium heat. Bring to a boil for 5 seconds.
  4. Remove the pan from the heat and cool the mixture over an ice bat
