Method

  1. To make the ice cream base, combine the milk, cream, 3½ oz/100 g of the sugar, the glucose, salt, and walnuts in a saucepan. Add the vanilla bean pod and seeds and bring the mixture just to a boil over medium heat. Immediately remove from the heat, cover the pan, and let steep for 5 minutes.
  2. Remove the vanilla bean pod and return the mixture to a simmer.
