Method

  1. Combine the milk, walnuts, 1 lb/450 g sugar, and salt in a large saucepan and bring to a boil over medium heat.
  2. Transfer to a food processor and carefully purée. Process to a homogeneous mixture. Strain back into the pot and return to a boil.
  3. Combine the stabilizer with the remaining sugar. Add to the base and return once again to a boil.
