Method

  1. Combine the water, granulated sugar, invert sugar, milk, and vanilla bean in a saucepan. Bring the mixture to a boil.
  2. Remove from the heat, cover, and allow to steep for 10 minutes.
  3. Return to a boil.
  4. Strain over the mascarpone and blend together. Transfer to a metal container and cool in an ice water bath to below 40°F/4°C.
