Method

  1. To prepare the filling, cream the butter and sugar with the paddle attachment on medium speed until light and fluffy, about 5 minutes.
  2. Mix in the almonds and vanilla extract. Add the eggs one at a time, mixing after each addition until fully incorporated and scraping down the bowl as necessary.
  3. Roll the puff pastry to a thickness of ⅛ in/0.3 cm. Chill
