Vanilla Shortbread, 1 by 3-in/3 by 8-cm strips

Method

  1. Place a strip of shortbread diagonally through the center of a square plate.
  2. Place a 2-oz/60-g quenelle of strawberry sorbet in the center of the strip and a pickled strawberry on each side of the quenelle.
  3. Form the yogurt cremeux into twenty 1-oz/30-g quenelles and place one at each end of the strip next to each of the pickled strawberries.
