Sugar 1


  1. Rub the sugar together with the lemon juice.
  2. Melt and caramelize the sugar over direct heat while stirring constantly.
  3. Add the hot cream slowly over low heat while stirring.
  4. Stir in the butter until melted and combined.
  5. Mix in the spirit, if using.
  6. Allow to cool to room temperature before use (see
