Method

  1. To make the white gianduja, grind the lightly roasted almonds with a small amount of the sugar until liquefied. Add the remaining sugar and the melted white chocolate. Mix just until homogeneous.
  2. Temper the white gianduja by tabling the entire batch vigorously on the marble until it is room temperature and well agitated.
