Dark chocolate, 61%, finely chopped

Method

  1. Place chocolate in a medium bowl.
  2. Bring the cream and glucose to a boil in a medium nonreactive saucepot. Pour the mixture over the chocolate and cover with plastic wrap for 1 minute.
  3. Remove the plastic wrap and stir together until homogeneous.
  4. Stir in the crème de menthe and butter until homogenous.
  5. Pour into a hotel pan and cover
