Dark chocolate, tempered 8

Method

  1. Spread the chocolate on a piece of parchment paper to ⅛ in/0.3 cm thick.
  2. Generously sprinkle the graham cracker crumbs across surface of chocolate before it sets.
  3. Cut into 3-in/8-cm squares.
  4. Place a piece of parchment and then a flat sheet pan on top of squares to weight down and keep the chocolate flat while setting up.
