White chocolate, melted, tempered

Method

  1. On a quarter-sheet of acetate, spread a thin layer of the tempered white chocolate.
  2. Allow it to set until it is still pliable but tacky. Cut into 1½ by 3-in/4 by 8-cm rectangles. Cut each along the diagonal to create two triangle garnishes.
  3. Allow to set for 24 hours before removing from the acetate.
