Method

  1. Line a bowl with aluminum foil. Lightly brush the foil with oil.
  2. Bring the sugar and water to a boil, washing down the sides of the pot with a wet pastry brush so that crystals do not form. Boil to 295°F/146°C.
  3. Remove from the heat and whisk in the royal icing. The mixture will rise and collapse.
  4. Return to the heat and bring to a boil again.
