Confectioners’ sugar, sifted


  1. Put 8 oz/230 g of the sugar, the gum tragacanth, and cream of tartar in the mixer. Add the water and mix with the paddle attachment on medium speed.
  2. Add the remaining sugar in several additions until the mixture forms a kneadable dough. (You may not need all the sugar.)
