    For 2 cups pastry cream, you can use one of the following

  • 2 tablespoons dry fruit brandy such as kirsch, dark rum, or Cognac
  • 4 teaspoons

Method

Crème mousseline can be flavored with fruit by replacing the milk in the pastry cream with strained fruit puree, or the crème mousseline can be made in the classic way— with pastry cream made from milk—and then flavored.
