This recipe gives you the option of using the mixed method—both a sourdough starter and commercial yeast. The sourdough starter provides flavor, while the yeast provides plenty of rise. If you prefer, you can just use the starter

In a bowl, mix the flour, water, and sourdough starter. If using the mixed method, add the yeast and combine. Cover the dough with plastic wrap or a moist towel and let rest for 20 minutes. Add the salt and knead by hand for about 12 minutes or with a stand mixer fitted with the dough hook on medium speed for about 7 minutes, or until the dough is smooth and passes the
