Cut the beef into thin slices across the grain of the meat.

For the marinade, finely slice the bulb spring onions as well as the basil leaves. Combine all of the marinade ingredients, reserve a little for serving. Cover the beef with the remaining mixture and cover with plastic film. Chill for 24 hours.

Quickly sear the beef shoulder over high heat.
