Using a utility knife or box cutter (with the blade extended to half the thickness of the cuttlefish), slash the outside (rounded side) of the cuttlefish in a criss-cross pattern.

For the marinade, finely slice the lemongrass and spring onions, pick the leaves from the dill. Combine these ingredients with the olive oil, sugar, lemon juice, curry powder and fish sauce.
