Plunge the tomatoes into boiling water for 30 seconds, remove the skin and finely dice the flesh. Peel and chop the garlic, onion and ginger. Gently sauté this mixture in the olive oil, add the diced tomato and allow to stew together.

Process everything together, add the soy sauce, season.
