Flattened rice, chira, is combined with winter vegetables to make another delightful savoury, which is served as often at breakfast as at teatime. This chirar polao is far less laborious, and can be made anywhere since packaged chira is sold in Indian grocery stores and our winter vegetables are the standard ones in the West.

Method

To make Chirar polao for three to four people, take 250 g (8 oz) of chira, throw out any impurities and wash it in a colander by pouring hot water
