  • 1 medium red onion
  • 2 tablespoons fresh coriander
  • 1 tablespoon

Method

Preparation

Chop the red onion and drizzle with a few drops of lime, a pinch of salt and set aside.

Remove the beans from the pods* and skin them.

Season the beans with onion, oil, vinegar, salt and pepper, then mix.

This is really a list of ingredients that go well together. A lot of information on plating and less on quantities! I didn't add the sesame seeds which was a bridge too far and simply mixed everything together. I also didn't peel my broad beans, but chose small ones, which I blanched for one minute. I felt though that there was something missing and so, the next day, I added some smoked salmon (in place of the tuna) to my left over salad and a soft boiled egg. Perfection!
