Bialys are the bagel’s first cousin. It’s a disk of bagel dough with a slight depression in its center, topped with diced onions and poppy seeds. Bialys are amazingly rustic, chewy and addictive. If you like bagels, you’ll love bialys!
In a mixer bowl, whisk together water yeast and sugar. Stir in one cup of the flour and salt. Add most of remaining flour and stir with a wooden spoon to make a soft mass. Attach dough hook and knead on slow 10-12 minutes, adding in more flour as required. Allow dough to rest, covered with a tea towel for about 45 minutes.
