Wholegrain red rice is packed with nutrients, has great texture, and offers a rustic flavour that’s amazing in salads. If you can’t find radicchio, you can use red chicory, and if pea shoots aren’t in season, rocket leaves are a great substitute.

Ingredients

  • 250 g red rice
  • 150 g long grain rice
  • 2 long red rad

Method

Cook the red rice in boiling water for about 20 minutes (following the packet instructions). With 8 minutes remaining, add the long grain rice and cook together. Drain well and allow to cool. Crush the garlic clove with the skin on and mix it with the rest of the marinade ingredients in a bowl. Wash the radicchios and cut them in half lengthways. Brush each half generously with the marinade. He
