Cauliflower was never my favourite as a kid, but times have changed. Today, cauliflower steaks are a staple on trendy restaurant menus. When paired with cheese, what seems like a simple dish becomes a real crowd-pleaser. Although not traditionally Italian, this cheesy cauliflower steak tastes so good that I had to create my own version!

Ingredients

  • 2 large cauliflowers
  • 1 small onion, chopped
  • 2 tbsp extra-virgin olive oil

Method

Prepare the cauliflower steaks

Start by slicing the cauliflowers, ensuring the stalk is included in each slice to hold it together. You need four slices, each about 3cm thick, from the central part of the cauliflower. Set aside the trimmings for the purée.
