Mushroom Tagliolini with Coffee, Almonds, and Pecorino Sauce

Tagliatelle or tagliolini ai funghi is such a classic of Italian cuisine. It features in many regions of the Italian peninsula and I love it - I just love mushrooms! To twist it and create something new, I’ve incorporated porcini mushroom powder directly into the pasta dough and paired it with a rich cheese sauce. The woody notes of coffee and almonds elevate this well rounded, hearty dish into a classy pasta for adventurous connoisseurs.
