Ingredients

  • 500–600 g watermelon
  • 300 g goat’s cheese
  • 50 g

Method

Slice the watermelon into thick slices and carefully remove the seeds as well as you can without damaging the flesh. Using a 2cm cookie cutter, cut the watermelon into circles and set them on a tray lined with a paper towel. In a food processor, blend the goat’s cheese with a splash of cream. Blend until you have a spreadable consistency, adding more cream if needed but don’t overdo it. Season
