Middle Eastern inspired aubergine is bliss during the summer when they are in season and have very small seeds inside. Charred and smoked over the barbecue or grill, they’re perfect when peeled and served as a side or salad. I added a little Italian twist with creamy burrata and marinated tomatoes for sweetness and balance. Serve this as a starter in smaller portions or as a single course with crusty bread on the side. You won’t regret it.
