This recipe is my favourite way to use up leftover Italian hard cheese rinds. With just 2 minutes in the microwave, you’ll have crunchy and cheesy glutenfree croutons! Enjoy as a snack, as a garnish for pasta dishes, or as a creative canapé base. You will never throw away a cheese rind again!

Ingredients

  • Hard cheese rinds (like Grana Padano or Pecorino Romano)

Method

To prep the rinds, scrape off the first layer of rind with a grater or the back of a knife. Pat dry thoroughly (or, ideally, leave in an open container in the fridge overnight).

Lay a piece of baking parchment on a microwave-safe dish. Add a couple of hard cheese rinds, rind side up, and cook in the microwave for 2 minutes at maximum power until golden and puffed up to at least double t
