A very simple yet impressive looking risotto, perfect for a summer dinner. The flavour profile will surprise you as it isn’t sweet at all. It’s zingy, full-bodied, and full of character.

The balsamic and basil really complement the flavour of the strawberries, all of which are perfectly encased in a creamy and buttery risotto.

Ingredients

  • 300 g strawberries
  • 1 small onion, chopped
  • 2 tbsp ext

Method

Rinse the strawberries and cut them into small cubes, but remember to save a few strawberries to slice as a garnish.

In a large casserole dish, gently sweat the chopped onion with a drizzle of olive oil and a pinch of salt. Cook gently for about 10 minutes until lightly golden and translucent.

Add the rice and toast on a low heat with a pinch of salt for about 5 minutes, mixing
