The flavour of a Prosecco risotto is loved by many, but the addition of fresh oysters can raise some eyebrows… Still, you’ve got to trust me on this one. The risotto is cooked with the oyster water and finished off with an oyster purée (sacrilege, I blitzed oysters!). The fattiness of the oysters makes the purée creamy, and the smoky mackerel adds an extra layer of flavour for an elegant finish.
