Although pasta alla genovese means from genoa, this dish is traditionally from Naples and Southern Italy! the pulled beef ragù is slow cooked to perfection with lots of onions for a smooth, mellow aftertaste. White wine gives the dish a nice edge. Another peculiarity of this dish is its use of ziti: a long, large tube that you have to break in half before cooking!
