Oats add a nutty taste. For ease, I use thin instant oats, as old-fashioned oats can taste a bit raw. If you prefer old-fashioned oats, place them in a skillet over medium heat until toasted and a very light golden brown. Grind oats in a food processor for a smoother texture.

Method

Combine flour, oats, baking powder, and salt in a large bowl.

Whisk eggs, buttermilk, butter, and sugar in a separate bowl. Add egg mixture to flour mixture, stirring gently until blended. Stir in blueberries. Let batter rest 5 to 10 minutes. Meanwhile, heat waffle iron according to manufacturer’s directions.
