You can substitute just about any citrus in this recipe—try lemon, grapefruit, orange, or blood orange for a slightly different flavor.
Combine sugar and 1 cup water in a saucepan over medium heat. Cook, stirring often, until sugar dissolves. Remove from heat and cool completely.
Combine blueberries, zest, and juice in a food processor. Process until smooth. Strain mixture through a wire-mesh sieve, pressing berries with a spoon or spatula. (For a chunky textured dessert, skip straining.)
