This is a recipe where dried herbs are actually preferable to fresh ones. Try to find dried Greek oregano, as it is more aromatic. It is harvested when it flowers and is dried in bunches. The sharpness of the mustard and lemon cuts through the fat of the lamb ribs.

Ingredients

  • Finely grated zest of 1 lemon
  • ¼ cup (60 ml) freshly squeezed lemon juice

Method

Mix all the ingredients together. Refrigerate until ready to use.
