Begin with making the fritters. Use a box grater to coarsely grate the zucchini into about 5mm-thick strips. Use your hands to squeeze out as much liquid as possible. (You will need 550g zucchini after squeezing).
Lightly whisk the eggs in a large bowl. Add the zucchini, onion, cheddar and flour. Mix until well combined. Season with salt and pepper.
