  • ¼ loaf white sourdough (1-2 days old is best), chilled in the fridge
  • 2 tbsp lemon extra virgin olive oil
  • Sea salt flakes, for seasoning</

Method

  1. Begin with making the chicken liver parfait. Remove the chicken livers, butter and eggs from the fridge 1 hour before starting and set aside to come to room temperature.
  2. Meanwhile, place eschalot, garlic, herbs and alcohol in a saucepan over medium heat. Bring to a simmer. Simmer until liquid reduces by half. Cool.
