  • 2 kg sebago potatoes, peeled
  • 200 g duck fat
  • Vegetable oil, for deep-frying

Method

  1. Place the potatoes in a large saucepan and cover with water. Bring to a boil over high heat. Cook for 20-40 minutes or until a small knife runs easily through the potatoes (they should be tender, but not falling apart). Drain and transfer to a tray. Cool for at least 1 hour.
