  • Blackberry powder, for dusting
  • 16 fresh blackberries, halved
  • Fresh marigold petals (or other edible flower petals), for serving

Method

  1. Begin with making the lime crémeux. Use a balloon whisk to whisk the condensed milk, cream and lime zest in a large bowl. Whisking continuously, add the lime juice (the mixture should thicken straightaway). Gradually add the icing sugar, in small amounts at a time if needed, to reduce the sharpness of the lime.
