This is one of my favourite recipes. It is a staple in our kitchen because it is so divine.

Ingredients

  • 60 ml (Ā¼ cup) white balsamic vinegar
  • Juice of 2 lemons

Method

  1. Place the vinegar, lemon juice and mustard in a tall jug. Use a stick blender to blitz until combined. With the motor running, slowly add the oil until the mixture emulsifies (the dressing should be thick and not split). Season with salt and pepper.
  2. Use straightaway or keep in an airtight container in the fridge for up to 3 months.
